Sake Brewery, Shusen-kurano was founded in Kawanakajima, Nagano,
in 1540. Kawanakajima is blessed with beautiful nature and clear
spring water. Shusen-kurano is one of the oldest Sake breweries
in Japan with a long history of more than 460 years. One of the
major wars, the Battle of Kawanakajima, was fought in here during
the civil war period of Japan in the 16th century. Most likely,
famous samurai generals such as TAKEDA Shingen and UESUGI Kenshin
tasted our sake.
Shusen-kurano is a small brewery and the capacity of production
is very limited (50,000 bottles/year) but we are proud of the
excellent quality of our product brewed in traditional methods.
TOJI, or sake master brewer, is the most important person in the
entire brewery. Our TOJI is Ms. Mariko Chino, the daughter of
the brewery owner. Interested in microbes, she studied microbiology
at Tokyo University of Agriculture, and worked at the National
Tax Agency Brewery lab as a scientist for two years. Inspired,
she then returned home to work in the brewery, learning what TOJI
has to do under the experienced TOJI. Eight years later, she acceded
to the position of TOJI.
Her inspiration and talent as well as her devotion helped the
brewery receive a lot of awards. She says: I am like a school
teacher. Sake is my student. Each sake is different, so my work
is to bring out the essence of each sake and correct what needs
to be corrected. All sake is happy if they are brewed in the right
way for them.
